All about Microgreens

What are Microgreens:

Microgreens are young vegetable greens, falling somewhere between a sprout and baby green. They are harvested, usually, in about 2 weeks after seed planting and have a very high concentration of nutrients when compared to mature greens.

Suggested ways to include microgreens in meals:

Fresh and Healthy Microgreens in Sandwich

Microgreens and very versatile and including them in meals are only limited by the home chef’s creativity. So please consider the below uses just as suggestions. Please feel free to experiment with your creativity and if you don’t mind, please share your culinary creativity and adventure for other readers viewing pleasure and motivation (readers blog section for posting / sharing experiences coming soon). Also, since these microgreens are delicate, it is recommended to add them just after cooking, whenever possible!

  • Blending with smoothies and juices
  • Topping of any number of courses / entrees
  • Adding them to sandwiches etc. (favorite with my children is using these microgreens in sandwiches instead of those big & bulky greens / lettuce)
  • Including with omelets, pizza, lasagna, soups, salads etc. just after cooking
  • Embellishing several foods like jambalaya, stews, stir-fries, curries etc.
  • Using in burgers, pasta, quesadilla, noodles etc. just before eating

Few routine things to remember:

  • Gently and thoroughly rinse the microgreens just before use (rinse only the qty. you are going to use)
  • Keep the microgreens refrigerated when not being used
  • Secure the microgreens not being used in an airtight container or reusable airtight bag to maintain and seal-in freshness
  • If during meal preparation, too much moisture gets on the microgreens, use a portion of kitchen tissue to very gently dry and then use a fresh kitchen tissue inside the airtight container / bag
  • Usually, these microgreens can be enjoyed for 7 – 10 days after harvest, if properly stored as above
